Arsenic poisoning, although decreased in the United States, is a worldwide concern that can affect the global agriculture market and the health of human beings. When consumed over a period of time inorganic arsenic has been seen to cause many types of short-term maladies as well as long-term adverse effects such as cancer. In different parts of the world inorganic arsenic has been observed in the groundwater and the groundwater is the main source where plants receive vital nourishment. Since potatoes receive nutrition from the earth and water the plant can easily uptake amounts of inorganic arsenic and keep it until consumed by human beings. This study will focus on different types of potatoes and will test them to see if there are any trace amounts of inorganic arsenic and if so if those levels are harmful to humans.
